When I think of the South of Spain I think of Malaga and a little town just an hour west from it, – Estepona. The warm and humid sea breeze you can feel anywhere you go, hospitable and loud small tapas bars and of course the wine. It almost feels like time had stopped there leaving everyone stuck in long sleepy days full of sun and talks over food. How awesome does it sound ha?
This one-pot chorizo and beans stew recipe`s cooking time is under 20 minutes and the flavor is so rich and unordinary, which makes it perfect if you are looking for something new and easy to make for your weeknight dinner.

For this one-pot recipe, we will need a deep frying pan. Get it nice and hot over high heat and add chorizo. Yes, you heard me right, do not add any butter or cooking oil. Chorizo is naturally full of fat so just add it to a hot pan and let it cook for 5-7 minutes. It will start releasing some fat and will turn its color from bright orange-red to more brown-red, and it is your sign to continue to the next step. |

Next add chopped celery, red onion, and bell pepper (I used orange but you can use any color) to your pot with chorizo. Mix it well and let it cook for 2-3 minutes. Add 1 cup of white wine and let it simmer for 5 minutes or until most of the wine evaporates. At this point sprinkle some smoked paprika and add drained white beans. |
