5 oz or 150 gr Aged Gouda
8 oz Crème Fraiche
4 or or 1/2 pack Cream Cheese
8 oz Swiss Cheese
1 tablespoon Butter
1 small Yellow Onion
to taste Fresh Thyme
1 teaspoon Minced Truffle optional

There is something magical in a bacon and mushroom dip duo, these comforting and earthy flavors are so cozy and warm. Add extra cheese and you will have an ideal recipe for a delicious, rich, and filling dip!

To be honest, I never really had/cooked any dips before I moved to the United States. Not that it is an American thing but oh boy, I was missed out on so many yummy flavors! My mother-in-law was my guide to this amazing land of dips: baked in the oven with crispy top or served chilled on some ice, – it is a staple appetizer on any table here in the South!

So here it is, my first dip recipe, which I created the day before Super Bowl. I wanted something warm and cozy yet a little bit elevated and of course delicious. Not to mention I did not have much time as I needed to cook at least 5 items for my little Super Bowl food party and dip needed to be tasty either hot right out of the oven or chilled. I can proudly announce: it was a big hit among my friends and family and they were all really looking forward to this recipe on my blog!

Did I also tell you that you can make my bacon and mushroom dip ahead a day or even 2 before your party/event and pop it in the oven whenever you need it, which makes my life as a party host way easier ( if you never had an “any makeup/wet hair/need to get dressed but still cooking” look when you friends ring your front doorbell type of issue – you are super organized/not me lol).

Start with bacon. Simply bake it at 400F/200C for 5-7 minutes, or halfway through. Dry excess fat with a paper towel and chop it into small pieces.

While your bacon is in the oven, grate swiss and gouda cheeses.

Finely chop the onion and sweat it in a frying pan over medium-low heat with 1 tablespoon of butter for 2-3 minutes. Chop mushrooms and add to your pan. Add truffle oil (optional) and keep cooking for another 5 minutes. Let it cool down a bit.

In a mixing bowl combine grated cheese mix, cream cheese, crème fraiche, onion and mushrooms, thyme, and minced truffle (optional as well). Add salt and pepper to taste.

Add your mix to a baking dish and sprinkle bacon bits on top and spread evenly. Bake at 350F for 30 minutes and broil for 1 minute, in the end, to add extra crispiness to your bacon.

Let it cool down a few minutes so your bacon and mushroom dip will get settled, serve warm accompanied with some crispy baguette or chips of your choice. Enjoy!
