My Two Cents
This Easy Chichen Piccata recipe is super delicious and fast. Piccata in Italian literally means “Pounded flat” and that gives you direct cooking instruction! I love the simplicity and finesse of this recipe. If you have less than 30 minutes of your time and a dinner you need to put together this is your answer!
My advice is to not be scared to overcook chicken, but rather let it get a super nice golden color. But first things first…

Prepare chicken breastCut each breast in a half following the long line, basically make it thinner 2 breasts! Cut each piece into 3 smaller ones and lay them next to each other on a cutting board. Using plastic wrap cover all of your chicken pieces. Now we need to make each piece flatter by either rolling a heavy rolling pin over (like I did) or pound it with a spatula/cooking mallet. |

Fry the chickenUse a deep and heavy frying pan for the best result. Melt 2 tablespoons of butter over high heat. Using a shallow plate cover each chicken piece with flour and add to your pan. If all the chicken would not fit at once, - no worries! Fry for at least 5 minutes on each side or until it gets nice brown color. Set aside. |

Make the sauceAdd 1 cup of chicken broth to the pan and lower the heat to medium. Slowly whisk the bottom of the pan and let it mix with the broth. It will be the start of our sauce. Finely chop the shallot and add to the pan. Add some ground pepper (about 1 teaspoon will be enough). Keep stirring and cook for another 3-5 minutes. Add 1 cup of white wine (I used dry) and keep cooking the sauce for 2-3 minutes more. Add capers and squeeze the juice of 1 small lemon or a ½ of a large one into the pan. Mix well. |

Final StepLower cooking heat and return your fried chicken to the pan. Here is the trick: do not move it around too much but use a spoon instead to pour sauce over each piece. This way your chicken piccata will look colorful and appetizing leaving a nice gold color. Let it simmer in the sauce for 2 more minutes. And done! Serve hot over some pasta or any other side you love! |
