2 Chicken Breast
2 Tomatoes
4 sticks Celery
12 Kalamata Olives
5 Sun Dried Tomatoes
1 cup Chicken Stock
2 tablespoons Capers
1 tablespoon Old Style Mustard
3 cloves Garlic
3 tablespoons Marinara Sauce
1/2 teaspoon Smoked Paprika
to taste Fresh Parsley
to taste Dried Herbs Blend
to taste Salt
to taste Pepper

Super easy and flavorful One-pot Mediterranean Chicken recipe will become your family favorite! Add that it is cooked in less than 30 minutes, – and you have a perfect weeknight dinner idea right here.

This one-pot recipe is a lifesaver if you are looking for the out-of-the-box way to cook boring chicken breast.

Yes, I said it, chicken breast is the most boring protein to cook with, yet it is the most popular! How many times did you stare at it and thought: “what else I can possibly make with it that does not require crazy hard-to-find ingredients yet new and different?”

I was there a bunch! And one night I opened up my pantry and decided to put all my favorite ingredients together and see how it will end. Let me tell you, it was so amazing that my husband asked to make it again the same next week. And just like that this easy and delicious One-Pot Mediterranean Chicken became my go-to weeknight recipes.

Slice and season chicken breast

Cut each breast into mid-size pieces, approx. 3X1 inches. Mix in even parts: dry herbs, smoked paprika, salt, add a dash of pepper. Coat chicken pieces evenly.

Sear chicken

In a large deep frying pan heat some olive oil. Add seasoned chicken pieces and let it cook for 3 minutes on high heat. Flip each piece and cook for another 3 minutes.

Mince 3 cloves of garlic and sprinkle on top of chicken. Stir and cook for another minute.

Add the rest of the ingredients

Chop celery and tomatoes and put in the pan. Add olives, capers, and slices of sun-dried tomatoes. Lower the heat to medium and mix ingredients well. Keep cooking stirring occasionally for 5 more minutes.

Add stock

At this point add a tablespoon of old-style mustard and 3 tablespoons of marinara sauce. Pour in 1 cup of chicken stock, mix everything to make sure chicken pieces are coated in sauce, and close your pan with a lid.

Simmer

Cook with a lid for 5-7 minutes. In the end, add some freshly chopped parsley and serve!

I love to pair my One-Pot Mediterranean Chicken with some Israeli Couscous or rice.

TIP: you can use any cut of chicken instead of breast, this sauce goes well with almost everything! Keep refrigerated for up to 3 days and get ready for some compliments!
