Gooey and rich delicious phyllo-wrapped baked brie recipe is such an elegant appetizer. Adding some prosciutto and rosemary makes it even better! This easy phyllo baked brie appetizer is perfect to please a crowd or for a romantic dinner at home.

If you are reading this recipe, that means you are either having a party or event coming up. Well, good choice! This appetizer is a star of the show, whether it is a friend’s dinner or date night. Plus it is super fast and easy to make. Plus each ingredient is easy to find in any regular supermarket close by, so no jumping hoops and feeling like you about to brew a potion.

All you need is 15 minutes of your time, minimum cooking skills, little patience, and gentle touch ( for the stubborn phyllo dough)

If you are still hesitant about using phyllo, I hear you! It looks so delicate and tricky, but with my tips, you will master this from the first try. If not, dinner is on me lol

Wrap Brie in Prosciutto

Preheat oven to 350F/180C. Place 2 tablespoons of butter in a ramekin and place in the oven to melt.

Start with placing slices of prosciutto in a circular shape, or like a flower, on a cutting board. Place your brie wheel in the center and gently start wrapping it with prosciutto. Add more slices if needed to cover whole cheese. See the pictures below to help you with this step. Nicely chop the rosemary and sprinkle all over wrapped brie. Set it aside.

Layer phyllo dough

This step does sound intimidating, so use my tips below to ensure you will master this process from the first try!

Phyllo Dough Tips

You can find phyllo dough in the Frozen Dessert section in your nearby supermarket. Yes, I say it because I did run the whole shop several times before I found it, so here, don`t thank me!

Thaw completely, otherwise layers will break before you touch them.

Cover all phyllo sheets except the one you currently working on with a damp kitchen towel.

Do not seek perfection and do not throw broken sheets away! Phyllo dough is so thin that you always can cover a hole or breakage with another piece, easy peasy!

Melted butter is your best friend! Be generous when brushing each sheet with it. Use it as the glue between layers.

And keep close attention to the ends of each sheet, cover them nicely to prevent breaking and crusting.
In my practice, 4 layers of phyllo are making optimal coverage and flakiness, while allowing all layers to cook through. No wet dough over here!

Wrap Brie in Phyllo Dough

Sometimes it is easier to show than to explain, don't you think? That`s what most of the food blogs are lacking today. That's why I purposely focus on step-by-step directions with pictures, rather than writing a poem.

Simply place brie with bottom part up in the center of phyllo layers, and start wrapping working your way around, and making sure you seal each angle. Use more butter if needed. Flip it back.

Add Fig Jam and Bake

For KETO potion SKIP FIG JAM, and use a little bit of melted butter on top of our wrapped brie instead.

This step does not need much explanation: add fig jam to the top of your wrapped brie, spread carefully.

Place on a baking sheet and sent to your preheated oven for 15 minutes.

Here is another TIP: many recipes call for 400F right away. DO NOT do that, or your sealed phyllo cover might break on the top. Instead, bake for 350F for the first 15 minutes and then switch over to broiling mode on low. Keep a close eye and take brie out as soon as the jam on top will begin caramelizing.

Your delicious and beautiful appetizer is ready. Let it cool down just for a few minutes, and serve!
