If you here for the first time, Welcome to my blog! It is a pleasure to see new faces, especially ones who like cooking as I do! Don`t be shy and if you are eager to start making this delicious Sesame Chicken Noodle Salad, go right to the DIRECTIONS, while I will blab a little more about this dish and how did I almost burn my kitchen once trying to smoke some oil for the sauce.
My mother`s side of the family has several Koreans, so there is not a surprise that I grew up eating a lot of Korean food. I think that this is how my passion for Asian food was born, by watching my aunts preparing colorful dishes with weird-looking ingredients. And the finale of that culinary show would be them smoking some sesame oil and pouring it on spices so the smell will travel throughout the house and invite all of us to come to join the table for supper.
Years later, when I was just making my first steps in the kitchen living by myself, I decided to make some sort of Asian bowl. And of course, I thought that I can do the same as my aunts did and heat up some oil and pour it over the plate… Seriously, how hard can this be? Not going into details, that move did cost me the dish, the tablecloth, and the curtains. That is why do not full around with steaming hot oil!
In this Sesame Chicken Noodle Salad recipe, I will make sure you will succeed from the first attempt, just follow my directions below.

FRYING VEGGETABLESWe will need 2 pans for this Sesame Chicken Noodle Salad, one for cooking all the ingredients, the other one to heat up the oil. Using the peeler, slice your carrots into thin ribbons, then cut each one along the side into long skinny strips, just like ribbons. Cut spicy green pepper into small cubes, you can leave this step out if you do not want the salad to have any heat. Cut garlic cloves into thin slices. Chop bell peppers into thin strings, like on the picture. Preheat cooking pan on a high heat and add 1 tablespoon of canola oil and 1 tablespoon of sesame oil. Add hot pepper and garlic to the pan, stir and fry for 1 minute. Add bell pepper slices and keep stirring for another 3 minutes. Our goal here is to keep some crunch in our peppers. 3 minutes later, take your veggies out of a pan and set aside. Add one more tablespoon of canola oil 1 tablespoon of sesame oil and wait several seconds for it to heat up. Add carrots and fry it for 2 minutes, set aside when done. |

COOKING CHICKENChicken breast for this Sesame Chicken Noodle Salad is best cut into thin long strips. This recipe does not require any seasoning on it, simply cut and add to the pan. Chicken will release some juice, so keep cooking heat on high and keep stirring occasionally until all the water is gone, should take you about 5-7 minutes. Now it is time to add rest of the soy sauce and 3 tablespoons of honey. Mix it well so all chicken pieces are coated evenly and keep cooking on high heat stirring until chicken gets golden brown, for about 5 more minutes. Sprinkle sesame seeds and set aside. |

MAKING THE SAUCEGrind coriander seeds with red chili pepper flakes and place it on top of the salad. In a small frying pan preheat the rest of the Sesame oil. Keep heat on medium – high until the oil will get smoky. Pour hot oil right on top of the coriander and chili flakes mix. Wait for a minute and start mixing all salad layers together. Add sesame seeds and serve warm or cold! |
